Vegan Avocado Brownie Recipe



This holiday season I wanted to try this long waited Avocado Brownie Recipe that I saw on Pinterest years ago. I found a few recipes on google and added my own spin to the recipe. It's quick, easy, and is great for vegan foodies since there are no eggs, no dairy, or any ingredients that may send you to the toilet if you're lactose intolerant like me.


Ingredients:


2 Small Avocados or 1 Large

1 Cup of Melted Avocado Butter

1 Cup of Cocoa Powder

1 Cup of Potato Flour (or any kind of flour. I used potato)

1 Cup of Brown Sugar

1 Cup of Sugar

(I did not measure this much sugar. It just seemed like too much. You could really do without the sugar altogether. Try using just brown sugar)

1 Tbs of ground flaxseed or chia seed

(I threw some chia seeds I had in my coffee grinder to make it into powder. However, if you leave the seed whole it does give the brownies a subtle crunch that I liked)

1 teaspoon of Baking Powder

1 teaspoon of Vanilla Extract

Dark Chocolate Chips (dairy-free)

I threw marshmallows in because I love marshmallows :)

Instructions

  1. Preheat the oven to 350

  2. Throw everything in a bowl, or food processor if you are lucky to have one

  3. Blend the ingredients until you get a nice fluff of brownie mix

  4. Put the mix into a brownie pan

  5. Bake the mix for 20-30 minutes (does not take long to bake)

  6. Enjoy!

  7. Store brownies in the fridge until they are all eaten!
